Seriously, these recipes are AMAZING! My mom and I found them on a little McCormick handout by the spices. Try them...so yummy!
Garlic Rosemary Mashed Potatoes
2 lbs russet or Idaho potatoes, peeled & quartered
1 tsp salt
1/2 tsp. Garlic Powder
1/2 tsp Rosemary leaves, crushed
1/4 tsp black pepper
1/2 cup milk
1/4 cup (1/2 stick) butter
1 tsp Parsley Flakes
Place potatoes in medium saucepan. Cover with water. Bring to boil. Reduce heat to low, cover and simmer 10-15 minutes or until potatoes are fork tender. Drain and return potatoes to saucepan. (In essence...make mashed potatoes...).
Sprinkle with salt, garlic powder, rosemary and black pepper. Mash with potato masher (I just throw mine in my kitchen aid and let it do the work). Gradually add milk, then butter. Stir in parsley.
Broccoli Cauliflower Casserole
1/2 cup fine dry bread crumbs
1/4 cup plus 2 TBSP. grated Parmesan cheese, divided.
2 TBSP. butter, melted
1 1/2 tsp Italian Seasoning, divided
1 package (16 oz) frozen cauliflower florets, thawed
1 package (16 oz) frozen broccoli florets, thawed
1 large onion, chopped (1 cup)
2 TBSP butter
2 TBSP flour
1 tsp. Garlic Salt
1/4 tsp Ground Black Pepper
1 1/4 cups milk
4 oz (1/2 package) cream cheese, cut up
Mix bread crumbs, 2 tablespoons of the Parmesan cheese, 2 tablespoons melted butter and 1/2 teaspoon of the Italian seasoning in small bowl. Cut up any large broccoli or cauliflower florets into bite-size pieces. Cook onion in 2 tablespoons butter in large skillet on medium hear about 5 minutes or until tender. Stir in flour, remaining 1 teaspoon Italian seasoning, garlic salt and black pepper. Add milk; cook and stir until thickened and bubbly. Add cream cheese and remaining 1/4 cup Parmesan cheese; cook and stir until cream cheese in melted. Add vegetables; toss gently to coat. Spoon into 2-quart baking dish. Sprinkle top evenly with crumb mixture. Bake in preheated 350 degree oven 40 minutes or until heated through and top is lightly browned.
AMAZING! I made both last night with a small roasted chicken and it was a hit.
